Here is my second recipe! For 4 people.
Rubb 8 big potatos with olive oil, and pock them twice with a knife. Roast at 190 degrees for an hour.
In the mean while, fry 150 gr of bacon. When it's crisp reserve and start frying 3 onions in the bacon fat with olive oil. Add garlic.
Then, when the onios are soft reserve. In the same frying pan, fry half red pepper and 4 tomatos with oregano,salt, english mustard, and vinegar.
When the vegetables are done mix them, the onions and the bacon all together in a bowl. Add 200ml of cream to the mix.
When the potatos are done take an horizontal piece with a knife and with a spoon do a big hole in them. Take the mash potatos and mix them with the previous mix.
With the final mix, put it in the hole done in the potatos. On top put also cheese. And then it goes in the oven for the cheese to melt.
